Because it includes more Omega-3 fatty acids and antioxidants, as well as less cholesterol and saturated fat, grass-fed beef is healthier. Grass-fed beef offers higher levels of beta-carotene and up to four times the amount of vitamin E, lessening the risk of heart disease and cancer. Carnosine is a chemical that is essential for muscular function. It is derived from beta-alanine, a dietary amino acid present in high concentrations in fish and meat, particularly cattle. Supplementing with high doses of beta-alanine for 4–10 weeks has been proven to boost carnosine levels in muscles by 40–80 percent.

 A rigorous vegetarian diet, on the other hand, may result in reduced amounts of carnosine in muscles over time. Carnosine levels in human muscles have been related to decreased tiredness and increased performance during exercise. Furthermore, controlled research indicates that beta-alanine supplementation can increase running time and strength.
